PROCESS: Our figs come from farms in Romagna, where they are carefully and painstakingly handpicked one by one. Once the freshly harvested fruit arrives at our laboratory, we sort and wash them. Then, the magic happens: a slow 12-hour cooking process in a vacuum-sealed pot that preserves all the fruit’s natural characteristics, capturing the essence of Romagna in a jar.
