PROCESS: Our organic Percoche peaches are harvested in July and arrive at our laboratory within 12 hours of picking. After careful sorting and washing, they are peeled, halved, and pitted. Finally, they are jarred and preserved in a syrup made of water, cane sugar, and lemon juice.
